When blind-baking a pie crust, weighing down the unfilled pastry helps prevent the bottom from bubbling and rising unevenly and the sides from shrinking. Ceramic ball weights work very well for this purpose, as they distribute heat evenly and apply just enough pressure for a perfectly crisp and level crust.
This container comes with just over 3 lb (1500g) of weights, which is enough to completely fill a standard 9" diameter pie – something you don’t see often as they are typically offered in much smaller quantities, requiring you to purchase multiple packs.
For best results, line your dough with parchment paper before filling the entire crust all the way to the top with the ceramic weights, then bake.
